Dew Drop Brut Rosé

The new release of DewDrop Brut Rosé is a blend of Marquette and Frontenac Blanc, and La Crescent, sourced from growers near Chankaska in southwestern Minnesota. The grapes were whole-cluster pressed, with a portion going to barrels for fermentation and the rest going to stainless steel tanks.  The wine was fermented to dryness, stabilized, and filtered, then bottled with a bit of added yeast and sugar in the traditional Champagne method.  The wine fermented in the bottle over the next six to eight weeks and then was allowed to age for several more months.  The wine was finished in a Brut, or dry, style.

The DewDrop Brut Rose is soft and subtle with notes of oak, vanilla, and dried rose bouquets. On the palate, delicate flavors of watermelon and cherry, round out a lingering finish.

Pair with roasted pork loin and creamy polenta, caramelized onion dip and potato chips, or hors d’oeuvres using smoked salmon or ham.
