Dewdrop Sparkling Marquette
DewDrop Sparkling Marquette is the second of two sparkling wines released by Chankaska Creek Winery in 2015. It is the independent creative effort of Assistant Winemaker, Josie Boyle, who heads the sparkling wine program at Chankaska. Boyle created the DewDrop label to be casual and approachable while also being spontaneous and unique.
This is the first sparkling Marquette to be made in Minnesota, but it was a conscious choice to use it. Like the other hybrid wine grape varieties developed by the University of Minnesota, Marquette tends to be high in acid. This acidity pairs nicely with the bubbles in sparkling wine, while the red fruit aromas complete the wine. While it’s unusual to see a dark rosé sparkling wine such as this, the result is a luscious blend of tart fruitiness that pairs well with grilled pork, creamy mushroom-based sauces, and green salads with fruity vinaigrettes.
