Dew Drop Brut Rosé
Aromas of strawberries and ripe plums dominate the nose, along with hints of cherry and sweet spice. On the palate, the wine is balanced and full, with flavors of strawberry jam. The lingering finish stays with you long after the last sip.
The 2016 release of DewDrop Brut Rosé is a blend of Marquette and Frontenac Gris sourced from growers near Chankaska in southwestern Minnesota. The grapes were whole-cluster pressed, with a portion going to barrels for fermentation and the rest going to stainless steel tanks. The wine was fermented to dryness, stabilized, and filtered, then bottled with a bit of added yeast and sugar in the traditional Champagne method. The wine fermented in the bottle over the next six to eight weeks, and then was allowed to age for several more months. The wine was finished in a Brut, or dry, style.
Pair with roasted pork loin and creamy polenta, caramelized onion dip and potato chips, or hors d’oeuvres using smoked salmon or ham.
